Blueberry City
It seems like we have blueberries coming out of our ears around here this past week. A ten lb. box of freshly picked blues really goes a long way!
Our good friend Colleen showed me and some other Mommy friends how to make and jar homemade blueberry jam. It is so scrumptious.
And I made a delicious blueberry pie with a recipe from "The Fannie Farmer Cookbook" that goes like this:
Two 9 inch pie crusts
4 cups fresh blueberries
3 tbsp. flour
1 cup sugar
1/8 tsp. salt
1 tbsp. lemon juice
1 tbsp. butter
Preheat oven to 425 degrees. Line the pie pan with one of the pie crusts. Mix the flour, sugar, and salt in large bowl then add the blueberries and lemon juice and toss well. Pile the mixture into the pie pan and dot with butter. Roll out the top pie crust, drape it over, pinch the edges and cut several vents in the top. Bake for 10 minutes then lower the temp. to 350 degrees and bake for an additional 30-40 min. or until top is browned.
